A question that I got via e-mail this week…
Q: Besides adding avocado to a green salad or a sandwich, what can you do with leftover avocado? DH
Tomato and avocado
A: Without greens, avocados plus tomatoes make a great salad. For a seemingly complicated breakfast dish, we love to top scrambled eggs with salsa and avocado slices (in a restaurant, we’d pay big money for this!).
Or how about wrapping a corn tortilla around chicken (seasoned with ancho chili powder and cumin), some thinly sliced cabbage, avocado slices and a generous squeeze of lime (a combo I saw in Cooking Light but you can bet their recipe was more complicated).
If you have leftover avocado, what do you do with it?

What is ‘leftover’ avocado? That’s like leftover wine. Does such a thing even exist? Ha ha!
Our favorite thing to do with avocado is to make it into a sandwich spread. It’s especially great for those of us who would like a condiment on a sandwich or hamburger but don’t care for mayonnaise. You might need to jot down the ingredient(s) — smooshed avocados. The recipe of choice for our children, perhaps with a pinch of salt. You could add salsa, a little lime juice, or cilantro…the possibilities are endless. Subway used to offer an avocado spread but they have discontinued it, sadly.

I know it’s not the most healthy thing to do, but I’ve been known to sneak a spoonful out of the refrigerator…IF I ever have leftover avocado. I really, really like avocado.

OK, you’re the third person who mentioned NOT having leftovers – I’m with you there. My husband was raised in Louisiana and grew up on eating avocados with a vinaigrette dressing on them – no other ingredients. I’ve come to see (and taste) the deliciousness in that so leftover avocado is not a problem at our house.
